Why this matters

Your students and your workers already use AI. There is no going back, and AI detectors do not work, the regulators now say so themselves.

So the real question is not how to catch AI. It is this: for each part of a unit, does the skill still have to be shown without help, or is using AI well now part of the job? Answer that honestly, part by part, and your assessment stays defensible without pretending the world has not changed.

That is the whole brief below. We do not guess. We look at how the actual work is changing, then make the call.

Resist or Integrate, part by part

This unit certifies a food handler who uses personal hygiene practices to prevent contamination that could cause food-borne illness, following set organisational procedures and identifying and controlling food hazards. The real job is physical and embodied: wash hands correctly at the right moments, wear a clean uniform and the required protective equipment, keep personal health issues out of the kitchen, avoid direct contact with ready-to-eat food, keep surfaces and hands hygienic, and spot and report an unsafe practice or hazard. It sits under the Australia New Zealand Food Standards Code and, in many roles, the food safety supervisor obligations that some states require.

AI barely touches the heart of this unit, so it stays AI-resistant, and its own assessment conditions already protect authenticity. The core work is a body doing a physical task under observation: handwashing, protective equipment, personal grooming and hygienic food contact, none of which a learner can outsource to a tool. The only genuine touchpoints are light: hazard reporting increasingly happens through digital food-safety apps, and where this unit is delivered as an online food-handler course the knowledge quiz is the part a learner could run through generative AI.

Follow hygiene procedures and identify hazards (Split). Following hygiene procedures and physically spotting and correcting a hazard is observed practice that resists AI. The one light touch is reporting: recognising and escalating an unsafe practice is still the handler's judgement, but the report itself now often runs through a digital food-safety app, so integrate the tool for the logging and assess the judgement, not the data entry.
Report personal health issues (Resist). Self-monitoring your own health, disclosing an issue that could contaminate food, and withdrawing from food handling is a personal and ethical act tied to the learner's own body and conduct. A tool cannot perform or evidence it for them, so this is fully AI-resistant.
Prevent food contamination (Resist). Clean clothing and protective equipment, keeping personal items and direct contact away from ready-to-eat food, hygienic contact with surfaces, and correct cleaning and sanitising are embodied physical performance under the unit's mandated observation conditions. This is the single most AI-untouchable part of the unit.
Prevent cross-contamination by washing hands (Resist). Handwashing at the right trigger points and with the right technique is the defining physical competency of the unit, observed against the food-safety personal-hygiene requirements. Nothing about AI changes the act or when it is required.
Knowledge of food safety law and hygiene (Resist). The knowledge of food safety law, contaminants, health-risk diseases, handwashing triggers and reporting procedures must be shown unaided. The catch is the method: as an unsupervised online quiz it is outsourceable to generative AI, so the exposure sits in how the knowledge is checked, not in whether it should resist AI.

How AI is reshaping this work in Australia

The core competency is embodied physical practice performed under observation. Correct handwashing, protective equipment, personal health and hygiene, and hygienic food service each have to be shown on at least three occasions in a real or industry-realistic food environment. A tool cannot wash hands or keep a sick worker out of the kitchen for the learner, so naming the unit as AI-resistant is the finding, not a gap.

2026Our read

FSANZ Standard 3.2.2A Food Safety Management Tools, in force for food service and retail businesses since December 2023, requires food handlers in category one and two businesses to be trained in exactly this unit's content: personal hygiene, handwashing, obligations when unwell, and contamination. This frames the work as regulated physical practice, and it keeps demand for the unit steady rather than reshaped by AI.

2025Food regulator (FSANZ, Tier 1)

Where digital tools do touch food safety in Australian hospitality, they sit at the monitoring and record layer, not the personal-hygiene act. Australian platforms such as SafetyCulture digitise food-safety checklists, temperature logs and hazard reporting, and IoT probes like Celsi automate temperature monitoring. This is largely food safety supervisor and record-keeping territory, and it touches this handler-level unit only lightly, at the report-a-hazard step.

2025-2026Vendor / capability lead (Tier 6, flagged; SafetyCulture and Celsi are Australian)

AI-driven food-safety monitoring, such as image recognition of handwashing or protective-equipment compliance and predictive analytics, is emerging in large-scale and manufacturing operations, mostly overseas. For the individual hospitality food handler this unit certifies, it is too new and too operator-level to be the assessed task, and it does not change what the handler must physically demonstrate. Treat it as a lead, not evidence the work has moved.

This unit is very commonly delivered as an online food-handler course with a knowledge quiz, and standalone online knowledge questions on food safety law, contaminants and handwashing are fully outsourceable to generative AI. TEQSA's Enacting assessment reform in a time of artificial intelligence (Sept 2025) states plainly that detection alone cannot assure integrity and that redesign is the answer. It is higher-education guidance but it cross-applies to VET assessment design.

Where the current assessment is exposed

The good news is that this unit's own assessment conditions do a lot of the protective work for you: the physical hygiene practices have to be observed in a real or realistic food environment, which AI cannot sit in for a learner. The exposure is narrower and it is in two places. First, where the unit is delivered as an online food-handler course, the knowledge quiz on food safety law and handwashing is the part a learner can run straight through a chatbot unsupervised, so an open online quiz on its own proves little. Second, the hazard-reporting step is drifting into digital apps, which is a chance to modernise rather than a threat. The fix is not an AI detector and it is not a harder quiz. It is deciding which knowledge to anchor to a single minimum-sufficient verified check that works online, and how far to bring a digital reporting tool into the observed task.
